Roasted Sichuan Peppercorns

To roast and grind Sichuan peppercorns:
- Heat the wok to a medium heat.
- Add the whole peppercorns (you can roast up to 4 oz {125g} at a time and stir fry for about 5 minutes or until they brown slightly and start to smoke.
- Remove the wok from the heat and leave to cool.
- Grind the peppercorns in a peppermill or clean coffee grinder, or crush finely with a pestle and mortar, or in a strong bowl with the end of a rolling pin.
- Put the mixture in a screw top jar, seal tightly and store
